Just Breathe (Being Kind to Kim)

Holy moly! I thought I was busy before I had a kid! How do you even survive with more than one little mini-me running around? Piper turned one and life got busy. Oh, and I started my own business too, so life got more busy. And on top of that, it's September. Life just seems to speed up in September for some reason. Am I right?

Who has time for chopping vegetables these days? Not me! I'm going to grab a burger from A&W cuz I'm hungry NOW and I just don't have time. Just this once. I'll have a salad for supper. I promise. Yeah right. That's a slippery slope.

I did a lot of this over the summer - little unhealthy choices here and there. But the thing is, for me, once I start making these unhealthy choices, they seem to creep into my life more and more often.

Lucinda tells me that now that I'm super-busy, I have to be more organized. Schedule everything! Schedule exercise, shopping, spending time with family, all of it! I dunno. I like to be spontaneous sometimes, too.

But I do know that if I don't plan my food, I make unhealthy choices. I get hungry, then I get hangry and I grab whatever is easiest.

Sooooo... What's my plan? I need to chop vegetables. I need to schedule chopping vegetables. It sounds ridiculous, but it's true.

I, Kim, solemnly swear, that I will chop vegetables once a week, on Sundays. I love fresh, raw veggies and I will happily nibble away on a cucumber rather than chow down on greasy fries. But it needs to be convenient. It needs to be easy and visible.

When I'm stressed and busy and feel like I don't have time to eat healthily, I need to breathe. I need to remember that I won't die from little hunger pains. I need to be prepared. Yeah, okay Lucinda, I'll schedule in my food prep! Food-prep Sundays, here I come!
