Finding Joy Week 15

I’m looking forward to this summer for so many reasons. I don’t know what your June feels like, but mine has been so nuts and I can’t wait to have my evenings free to hang out with my family. I’m looking forward to having time to run in the evenings too. This summer I’m going to get off the couch in the evenings (except on Bachelorette nights) and start running. I have

no excuse, I even have kids who love going in the stroller for a run.

Here is a salad we made for a family BBQ this last week. If you love dill, you will love this one!

¼ cup cider vinegar

1 tsp honey/raw coconut sugar/(or skip this all together)

½ tsp sea salt

½ tsp fresh dill weed chopped (I used more like 4 tsp)

¼ tsp ground black pepper

2 Tbsp. Oil (your choice – I used olive oil)

2 Cucumbers – sliced

1 Cup sliced red onion

2 ripe tomatoes cut into wedges

In a bowl, mix the first 6 ingredients. Pour over sliced vegetables and mix. Let stand for at least 15 minutes before serving.
